And then put them into a saucepan, add cold water (and salt) and bring to the boil. When boiling leave them for 5 to 10 minutes (depending on size). Remove the potatoes and put aside.
Peel & chop the oregano and crush the garlic. Squeeze the lemon juice.
Fry the potatoes
Add the olive oil (or butter) into the frying pan and add & fry the potatoes.
When frying sprinkle the garlic, oregano, salt & pepper on top.
Finally when crispy add the lemon juice. Taste and add some more lemon juice if required.
