Pan fried potato with oregano

A lovely and memorable side dish combining potatoes, oregano and lemon.
This is one of my fresh oregano recipes

Equipment

  • 1 Large frying plan
  • 1 Saucepan

Ingredients

  • 375 g Potatoes
  • 2 cloves Garlic
  • 2 tbsp Fresh Oregano Chopped leaves
  • 1.5 tbsp Lemon Juice 1/2 a lemon
  • 1 tbsp Olive oil or butter - see note
  • Salt and Pepper

Instructions

Prepare the ingredients

  • Chop the potatoes into similar sized bits.
  • And then put them into a saucepan, add cold water (and salt) and bring to the boil. When boiling leave them for 5 to 10 minutes (depending on size). Remove the potatoes and put aside.
  • Peel & chop the oregano and crush the garlic. Squeeze the lemon juice.

Fry the potatoes

  • Add the olive oil (or butter) into the frying pan and add & fry the potatoes.
  • When frying sprinkle the garlic, oregano, salt & pepper on top.
  • Finally when crispy add the lemon juice. Taste and add some more lemon juice if required.
  • Remove from frying pan and enjoy.
