Roasted Cherry Tomato Sauce

With lots of flavour the sauce is easy to make - and great if you've got cherry tomatoes left over.

Equipment

  • 1 frying pan
  • 1 Rotary Food mill - see note
  • 1 Large Bowl
  • 1 Knife and chopping board
  • 1 Baking tray
  • Aluminium foil

Ingredients

  • 500 g Cherry tomatoes
  • 2 sprigs Basil
  • 1 Onion
  • 4 cloves Garlic
  • 2 tsp Oregano
  • 5 tbsp Olive oil
  • 1 tsp Sugar
  • Salt and Pepper

Instructions

Prepare the ingredients

  • Pick the tomatoes, wash & cut into half
  • Put tomatoes into a bowl, add 3 tbsp olive oil, oregano and some salt
    mix well.

Bake the cherry tomatoes

  • Put the tomatoes onto the foil lined baking tray - cut face down
  • Place in a pre-heated oven at 200 degrees C for 25 minutes

Combine all ingredients

  • Add some olive oil into a frying plan and fry the chopped onion and garlic until soft (about 3 to 5 minutes)
  • Add the baked cherry tomatoes and a bit of sugar
  • Fry until the surplus tomato juice has dried up. (about 5 minutes)
  • At the end add the chopped basil and stir well

Finalise the sauce

  • Put the rotary food mill on top of a bowl and add the cooked ingredients
  • Simply blend until all the sauce has poured into the bowl

Make your meal

  • Simply add to cooked pasta when ready or you can make it in advance and re-heat when required

Yes, simply put in a container and defrost when required
2. Do you need to peel cherry tomatoes?
No you don’t, simply wash them before use and then cut in half
3. Why roast cherry tomatoes before making sauce?
Because it will caramelize the tomatoes giving a more intense, concentrated flavour.
4. How long does homemade tomato sauce last?
You can store it for 2 to 3 days in a fridge – or up to 12 months in a freezer
5. Can I make this without a food mill?
Yes you can, either use a food processor or blender.
