Spicy beef in tomato sauce

Quick and easy very tasty meal - based on the Mauritius Beef Rougaille.
This is one of the coriander recipes as well as one of the thyme recipes

Equipment

  • 1 Large frying plan
  • 1 Saucepan (or wok)
  • 1 Knife and chopping board

Ingredients

  • 500 g Beef
  • 1 can Chopped tomatoes (400 g)
  • 1 Onion
  • 3 cloves Garlic
  • 1 sprig Thyme
  • 2 tbsp Chopped Coriander (Cilantro)
  • 2 tsp Ginger grated
  • 1 tsp Cayenne pepper
  • 2 tbsp Tomato puree
  • 3 tbsp Olive oil
  • 250 ml Water
  • Salt and Pepper

Instructions

Prepare the beef

  • Cut the beef into cubes and season with salt & pepper
  • Add olive oil into a large frying pan and fry the beef until cooked and tender
  • Remove from the pan and keep warm.

Prepare the sauce

  • Cut the onion into small bits, peel and crush the garlic, rasp the ginger, remove the thyme leaves and finely chop the coriander.
  • In the empty frying pan (or large wok) fry the onion, garlic, thyme and ginger until the onion is clear and cooked.
  • Then add the cayenne pepper, chopped tomatoes, tomato puree and water. Simmer for 10 minutes.

Finalise

  • Add the beef and simmer for another 10 minutes
  • Finally sprinkle the chopped coriander on top
