Thai basil tea

Equipment
- 1 Kettle
- 1 Either Cafetiere or tea pot
- 1 Or Tea infuser - see above
- 1 Sieve or strainer (optional)
Ingredients
- 10 Thai basil leaves
- 1 tsp Honey
- 1 Lemon
- 240 ml Boiling Water
Instructions
1. Prepare ingredients
- Squeeze the lemon juice from the lemon
- Remove the Thai basil Leaves from the plant. Roughen the leaves a bit – by clapping or gently rubbing them in your hands.
2. Make the core Thai basil tea
- Put the Thai basil leaves in the bottom of the cafetiere
- Add boiling water and stir. Leave to flavour for 3 – 5 minutes
3. Finalise the tea
- Add the lemon juice and honey and stir.
- Gently push the cafetiere down and pour into tea cup or mug
