How to make Orange thyme sauce

Ingredients:

  • 4 tbsp Fresh Thyme leaves – chopped
  • 180 ml Orange juice
  • 1 Onion – chopped into small squares
  • 200 ml Chicken stock
  • 150 ml Creme Fraiche
  • 1 tbsp Butter
  • Salt & Pepper to taste
  • 1 tbsp flour (optional)

Equipment

  • Saucepan
  • Chef’s knife
  • Measuring jug

Instructions

  • Fry the butter until melted in a saucepan.
  • Add the chopped onion and fry until soft and golden
  • Add the chopped thyme leaves, chicken stock and orange juice
  • Bring to the boil and simmer until it has reduced to half
  • Then add the creme fraiche and salt & pepper to taste
  • Stir until smooth

Optional

If the sauce is to thin and runny then add flour to thicken it. Simply blend 1 or 2 tbsp plain flour in a jug with the same amount of water and stir until no longer lumpy. Then add to the sauce and simmer for 5 minutes.
