This is a great recipe if you have mint left over (or it’s growing to fast).

It’s a bit like a combination of mint sauce and applesauce, and ideal not only for roast pork but also other roast meals. (I even like it with chips, only because I was grown up with the Dutch applesauce – appelmoes)

When making this recipe there are 2 main ingredients to focus on:

  • Mint
  • Apples

Which Mint so use?

The Top 4 Mint Varieties tend to be

  • Apple Mint – Strong flavour great for tea or adding to salads
  • Spearmint – Ideal for recipes like roast leg of lamb or pasta meals, etc
  • Peppermint – With a stronger flavour it’s ideal for lamb recipes
  • Orange Mint – Ideal for salads and mexican recipes like Salsa

You can use any of them – however the most easily available tends to be spearmint (also known as garden mint or common mint)

The recipe video below uses spearmint – but it’s well worth ‘experimenting’ with different mint types, as they will add a unique flavour. (Although maybe apple mint is a bit of a waste)

Which Apples to use

Like mint there are lost of different varieties of apples – Cox, Braeburn, Golden Delicious, etc.

  • Braeburn – Crisp and Tangy – Good for Sauce
  • Bramley – Tart and tangy – Good for Sauce
  • Gala – Crisp and Very Sweet – Excellent for Sauce
  • Golden Delicious – Crisp and Sweet – Excellent for Sauce
  • Fuji – Crunchy and Super – Very good for Sauce
  • Granny Smith – Crunchy and Tart – Excellent for Sauce
  • Jazz – Crisp and Tangy Uses – Good for Sauce
  • Pink Lady – Crunchy and Sweet -Tart Excellent for Sauce

Any of the apples will work, but they will provide a slightly different flavour. Yes, the sugar and mint in the recipes have an impact on the flavour – but with some of the apples you can use less sugar.

Fresh mint will make a difference

Fresh mint leaves add real flavour to many recipes, like the apple and mint sauce recipe.

You can buy Fresh Mint in many shops (for example you can buy it on Amazon)

But it’s also very easy to grow at home.

For example the After eight mint on the right.

  • Was planted from a plug plant
  • Grown in a pot (to stop it taking over the garden)
  • And ready to use withing 30 days.
  • And will keep growing and growing

If you want to grow your own mint at home then all you need is a plug plant and a pot.

But do note the different mint types all have a unique flavour (Orange mint, Spearmint, Apple Mint, etc.).

Apple and Mint Sauce

Equipment

Ingredients

  • 6 Whole Apples – Granny Smith, Pink Lady or Gala
  • 3 tbsp Fresh Mint Leaves
  • 3 tbsp Sugar
  • 3 tsp Lemon juice
  • 60 ml Water

Instructions

  • Get the ingredients ready
    Strip the mint leaves from the stalk and put on chopping board
    Chop the leaves into small pieces.
    Peel and core the apples and cut into large chunks.
  • Cook the apples
    Place apples, sugar and 1/4 cup water in a small saucepan
    Cook on low heat, gently stirring until the sugar dissolves
    Then simmer for 5 – 6 minutes or until apples are soft but still holding shape.
  • Mash the apples
    Let the apples cool for about 5 minutes
    Place apple mixture in the bowl of a food processor
    Add the lemon juice and mint
    Process until pureed

Notes

The length of time you need to simmer the apples will depend on how small you cut them and also on the type of apples. In the video I used Granny Smith apples with very large chunks and has to simmer for 15 minutes.
Just simmer until they become soft.
