Sausage tomato sauce

Lovely filling meal full of flavour great with mashed potatoes or pasta.
This is one of my fresh tomato recipes

Equipment

  • 1 Large frying pan or saucepan
  • 1 Chef Knife

Ingredients

  • 6 Bratwurst or similar sausage
  • 2 sprigs Fresh Thyme
  • 1 Onion
  • 4 Fresh tomatoes
  • 4 cloves Garlic
  • 1 tsp Chilli powder
  • 1 cube Chicken stock
  • 1 can Red Kidney Beans
  • 1 tbsp Extra virgin olive oil
  • Salt and Pepper

Instructions

  • Prepare the ingredients
    – Remove the thyme leaves and chop into small bits.
    – Cut the tomatoes into large bits. Peel the onion & garlic and chop into small bits.
  • Brown the sausage
    – Heat the olive oil in the frying pan, add the Bratwurst and fry until brown on all sides.
    – Remove from the pan and keep safe.
  • Fry & simmer the ingredients
    – Add the onion and garlic into the same pan and fry until soft. Then add the chilli powder and stir.
    – Add the sausages back into the pan. Add the chopped tomatoes and 200 ml water.
    – Crumble the chicken stock on top bring to the boil and then simmer for 15 to 20 minutes.
  • Finalise the sauce
    – Drain the kidney beans and then add the beans as well as the thyme into the pan.
    – Leave for a few minutes to warm up and then serve.

I’m often asked how do you make sausage with tomato sauce?

The easiest way is to use something like Bratwurst to make a sausage tomato sauce. The reason is that it’s a great way to add extra flavour to the dish.

To make this recipe:

  • You can use either Bratwurst or regular sausages
  • Great with mashed potatoes or pasta.

Fresh thyme is great for making sauces.The recipe below shows how to use it to make sausage tomato sauce – but there are lots of other recipes you can use to make where it will add real flavour. Such as Fresh Passata Bolognese, Pork Pear Tray Bake, etc.

3 key elements when making sausage tomato sauce

1. Which sausages to use

This is a recipe my family used to make in Holland but they tend to use ‘braadworst’ – which is readily available in most supermarkets and butchers.

Braadworst tends to be a very large ‘rolled up’ sausage which is usually fried in frying pan or on the bbq. The German equivalent I used is Bratworst – more readily available in supermarkets but a lot smaller. Typical sausages are even smaller.

You can use any type to make sausage with tomato sauce. However please note that the quality of the sausage makes a real difference to the flavour.

2. Pasta or Mashed Potato?

In the picture I made it with mashed potato and spinach a la creme. Although it will work just as well with pasta.

3. Fresh thyme

You can use either dried or fresh thyme.

However fresh thyme adds much more flavour and is very easy to prepare.

How to grow your own Thyme

When you are cooking fresh herbs tend to make a real difference to the results. Herbs are really easy to grow at home and many of them grow really fast.

If you go into most supermarkets you will probably be able to find a bag of ‘fresh’ thyme.

But there are 3 main advantages of growing your own thyme:

  1. It will be fresher with more taste (even the ‘fresh’ thyme in supermarkets will be at least 1 day old)
  2. You can grow thyme varieties (like orange or lemon thyme) not available in most shops
  3. You will save money
