1. – Do I boil my potatoes before air frying?

No it’s not essential, and boiling will only speed up the process a bit.

If you look at the recipe for pan fried potatoes with oregano (pictured) you will see we recommend cutting the potatoes into small bits and then boil them for 5 to 10 minutes.

Simple reason is that helps with making crispy potatoes with a soft inside when using a frying pan. The air fryer baby potatoes don’t need this action because the air fryer will be more effective for circulating air all around the potatoes.

2. – Are rosemary new potatoes good for you?

As a side dish this is great as part of a Gluten and lactose free meal.

3. – What goes well with new potatoes?

New potatoes are lovely but the downside is that they have very little protein.

If you want to eat a healthy balanced diet then combine it with another source of protein (such as chicken, salmon, etc.)

In addition it’s also a good idea to also add vegetables, like green beans, broccoli, carrots, etc.

For example the picture shows it combined with roast chicken and green beans.

4. – How to reheat new potatoes?

If you’ve made to much then they are very easy to reheat in the air fryer. Simply add them into the basket and heat on 180 degrees for 3 to 4 minutes.

This is a very easy to make side dish that is also very healthy.

  • 1 Air fryer

Ingredients

For the air fryer baby potatoes

  • 500 g New potatoes
  • 2 tbsp Olive oil
  • 2 tbsp Chopped Rosemary
  • 4 Garlic cloves
  • 1 tsp Salt
  • 1 tsp Pepper

For the healthy dressing:

  • 2 tbsp Chopped Parsley
  • 1 tbsp Olive oil
  • 1 tbsp White wine vinegar
  • 1 tbsp Maple Syrup
  • 1 tsp Dijon Mustard
  • Salt and Pepper

Instructions

Step 1 – Make the air fryer new potatoes:

  • Prepare the potatoes:
    – Wash and dry the potatoes and cut into half
    – In a mixing bowl add the olive oil and make sure all the potatoes are covered.
    – Add the chopped fresh rosemary, crushed garlic, salt & pepper
    – Carefully mix the bowl so that all the potatoes are covered.
  • Fry in the air-fryer
    – Add into the air fryer and fry for 15 to 20 minutes at 200 Degrees Celsius.
    Very important : make sure they are only 1 layer high (if you need more then cook them in batches)
    – Half way (after 7 to 10 minute) shake the basket.

Step 2 – make the healthy dressing.

  • – Combine the olive oil, white wine vinegar, maple syrup, Dijon mustard and the salt & pepper in a bowl.
    – Add the chopped fresh parsley and mix

Step 3 – Finalise the air fryer new potatoes

  • – Remove the new potatoes from the air fryer and put in a large bowl.
    – Add the healthy dressing and mix well.
