When made with fresh after eight mint the mint syrup will have a lovely unique flavour.

Fresh after eight mint is great for making mint syrup – a lot cheaper than buying the syrup instore, with fresh natural ingredients. But you can also use exactly the same method to use other mints, like apple, orange or peppermint to get different flavours

How to make fresh after eight mint syrup

Ingredients:

  • 250 ml water
  • 64 grams sugar
  • 1 cup fresh after eight mint leaves
  • Food colouring (optional)

Equipment

  • Medium saucepan
  • Knife

Instructions

  • Pick the after eight mint and remove the leaves from the stem
  • Pour the water and sugar in a sauce pan.
  • Heat to boiling, stirring to dissolve the sugar
  • Add the mint leaves and simmer for 15 to 20 minutes until it thickens. without stirring.
  • Then optionally add food colouring if you like.
  • Switch off the heat pour into a bowl, using a sieve to strain the leaves.
  • Let cool. It will keep in a fridge for a long time (about 4 weeks) because the sugar works as a preservative
