With a lovely fresh flavour the pork pear tray bake is full of goodness with a great taste.

For example:

  • Celeriac has a lovely nutty taste and was used in Chinese medicine
  • Honey is good as an antibiotic.
  • But the combination of flavours is ideal for pork!!

Fresh thyme makes a real difference to this recipe. OK you can also used powdered one but if you can use fresh you will notice the difference.

Pork Pear Tray Bake

How to make pork pear tray bake

Ingredients:

  • 4 Lean pork medallions
  • 4 Red onions
  • 4 Conference Pears
  • 1 Tablespoon runny honey
  • 1 Medium celeriac
  • 4 Garlic cloves
  • 2 Tablespoons Dijon mustard
  • 2 Tablespoons olive oil
  • 2 Tablespoons chopped fresh thyme
  • 1 Teaspoon mild paprika powder
  • Salt & pepper to taste

Equipment

  • Baking Tray
  • Chef’s knife & chopping board
  • Baking paper

Instructions

  • Pick the thyme, remove the leaves from the stem and chop into small bits
  • Peel & chop the red onion
  • Peel & chop the garlic
  • Peel the celeriac and slice into thin strips
  • Cut the pears into quarters and remove the core
  • Preheat the oven to 200 degrees celscius, and line a baking tray with baking paper.
  • Spread the onion, celeriac and pears onto the baking tray,
  • Cover with olive oil, the chopped thyme, some pepper and (optionally) some salt and put in the oven for 20 mins
  • Mix the crushed garlic, mustard, honey and paprika powder
  • Cover the pork chops with the seasoning
  • Remove the baking tray from the oven, turn over the contents and add the pork chops
  • Cook for 5 to 10 minutes until the chops are cooked

How to serve

Great on it’s own but I like serving it with peas.

  • Prepare & marinate the pork chops
    Mix the crushed garlic, mustard, honey and paprika powder
    Cover the pork chops with the seasoning
  • Finalise the dish:
    Remove the baking tray from the oven, turn over the contents and add the pork chops.
    Cook for 5 to 10 minutes until the chops are cooked

How to grow your own Thyme

When you are cooking fresh herbs tend to make a real difference to the results. Herbs are really easy to grow at home and many of them grow really fast.

If you go into most supermarkets you will probably be able to find a bag of ‘fresh’ thyme.

But there are 3 main advantages of growing your own thyme:

  1. It will be fresher with more taste (even the ‘fresh’ thyme in supermarkets will be at least 1 day old)
  2. You can grow thyme varieties (like orange or lemon thyme) not available in most shops
  3. You will save money
