Fresh rosemary tastes so much better then the ones from a jar and is really easy to grow in the kitchen. (and a lot cheaper) The recipe below shows how to use it to make Italian chicken breast in tomato rosemary sauce – but rosemary is one of the most popular herbs for cooking.

How to make rosemary chicken in tomato sauce

Ingredients:

  • 4 Chicken breasts
  • 1 onion
  • 6 Garlic cloves
  • 4 Rosemary stems
  • 1 Tin chopped tomatoes
  • 100 ml dry white wine
  • 2 tablespoons olive oil
  • 2 tablespoons spicy italian seasoning
  • Salt & pepper to taste

Equipment

  • Large saucepan & lid
  • Chef’s knife & chopping board

Instructions

  • Pick the rosemary and remove the leaves from the stem
  • Peel & chop the onion
  • Peel & chop the garlic
  • Chop the rosemary into small pieces
  • Cover the chicken breasts in the spicy Italian seasoning
  • Heat the frying pan and add the olive oil and chicken breasts
  • Fry for 5 minutes on both sides until brown (Don’t worry about the middle)
  • Add the chopped onion and garlic and fry for another 3 minutes
  • Add the tomatoes, wine & rosemary and cover the pan with the lid
  • Simmer on low heat for 30 minutes

How to serve

Great with items like yellow rice and green beans.

The spicy Italian seasoning

You can either make your own – for example by blending some paprika & oregano. 

But in the video, I’ve used Schwartz spicy Italian seasoning (Available in most supermarkets or Amazon)

3 Key questions

When making this recipe I’ve been asked 3 questions:

1. Does rosemary go well with tomato sauce?

Quite simply yes – for example it’s used a lot in many recipes. Like the very popular Passata Bolognese recipe.

2. What can I use instead of rosemary?

If you don’t have any rosemary available then the usual rosemary alternatives are either thyme, oregano or basil.

However for roast bird recipes (like roast chicken) a combination of sage and thyme is best. Replace the rosemary amount with the same amount of thyme, and then add 50% of the same amount of sage.

3. Can I use fresh tomatoes instead of tinned tomatoes?

Yes, you will need 2 cups of chopped fresh tomatoes to replace one can of diced tomatoes.

All you do is:

Step 1 – Wash & Core the tomatoes: Rinse thoroughly under a tap and remove the stem/core.

Step 2 – Blanch and peel the tomatoes.

  • Use a knife and mark a small “X” on the bottom of each tomato.
  • Then drop it into boiling water for 30 to 60 seconds.
  • And then transfer to ice water so that the skins will slip off easily.

Step 3 – Simply cut them into large bits and use a per the recipe below
